The exact mechanism has been isolated in laboratory studies: researchers found that a daily dose of 10 mg of cafestol for four weeks raises serum cholesterol by 0.13 mmol/L, an increase of about 8–10%. Yet a French press, where the grounds stay in prolonged contact with hot water with no physical barrier, lets through quantities well beyond that experimental threshold. Moving from a French press to a paper-filtered brew can cut cafestol exposure by more than 200-fold. It’s hard to find a single habit with such a clear, measurable impact on a cardiovascular marker.

This finding eventually weighed on official recommendations. In Norway, where boiled, unfiltered coffee is part of the culture, a twenty-year study concluded that drinking unfiltered coffee increases cardiovascular mortality risk, and these results led to the adoption of updated dietary guidelines in 2023. A shift in habit that, elsewhere in Europe, remains slow to take hold, even as coffee remains the world’s most consumed hot beverage.

Should you give up the French press altogether?

Coffee isn’t devoid of benefits on this front. It carries health advantages as well, including reduced risks of certain cancers and dementia, and the effect of cafestol is dose-dependent. For an occasional drinker of one cup per day, the risk appears limited; for someone who habitually drinks three to six cups daily of French press or a strong espresso, the LDL rise becomes statistically significant across several cohorts.

The good news is that the remedy doesn’t require sacrifice or a prescription: keep the same coffee, the same roast, the same morning ritual, but switch to a paper filter instead of a metal press or an Italian coffee maker.
